Named for the bluish wax in its leaves, the blue agave is a succulent plant grown throughout Mexico. Its treasure is in its carbohydrate-rich core, called the 'pina' because it looks something like a pineapple. When the plant is 7-14 years old, the leaves are cut off and the juice is extracted from the pina, which is then processed into syrup. The difference between varieties of agave syrups is due to the filtration of salts and minerals in the production. Raw organic agave nectar is produced at temperatures below 46 degrees celsius and has a sweet, neutral flavor. 

Why use it?

A natural sweetener, agave syrup is prized as an alternative to sugar in beverages and baking. It has a low glycaemic index, which means your body absorbs it more slowly than sugar, reducing the chance of a "sugar spike" that processed sugar can cause.

I tried this in my home-made organic chocolate and it was devine! Great consistency, blended well and tasted amazing.
