A natural sugar derived from the sap of the coconut plant, coconut sugar is hailed as a sweet, "healthy" alternative to refined sugar.

Coconut sugar is made by cutting open the flower of the coconut palm and collecting the the sap into containers. The sap is then placed under heat until most of the water has evaporated. 

Why use it?

Unlike refined sugar, coconut sugar retains some of the nutrients of the coconut. These include Iron, Zinc, Calcium and Potassium, along with some short chain fatty acids, polyphenols and antioxidants that may also provide some health benefits. It also contains inulin - a dietary fibre and prebiotic which may help to slow down the absorption of glucose. 
Coconut sugar's low glycaemic index means it won't raise your blood sugar levels as quickly as refined sugar does.

How to use Coconut Sugar

  • Baking: Replace white sugar with a 1:1 ratio
  • Tea, coffee and other beverages: Use the same 1:1 ratio as white sugar
