Despite its name, buckwheat is not a wheat at all. It's actually the fruit of a plant related to rhubarb and sorrel. It is widely popular in many nations for its nutritional benefits. 

Buckwheat is one of the few plant proteins that contain all 8 essential amino acids. 

Why use it?

Buckwheat flour is used in Eastern Europe to make blinis, in the US to make crepes and pancakes and in Asia to make Japanese soba noodles.  The rich flavour of buckwheat enhances many recipes.

How to use it:

Because it's gluten-free, buckwheat flour is difficult to use on its own when baking, but can be combined with other whole-grain flours and ingredients
